While cities like New York had their culinary gems, much of America was still stuck in a gastronomic time warp, relying on the same dishes and flavors that had been around for decades. The concept of a “celebrity chef” was virtually unheard of, but that all changed when two groundbreaking chefs—Tommy Tang and Wolfgang Puck—opened their restaurants in Los Angeles almost simultaneously.
